Beef Oriental(For Diabetics)
- 1 lb. lean round steak (1/4-inch thick)
- 2 Tbsp. vegetable oil
- 1 1/2 c. hot water
- 1 beef bouillon cube
- 1 Tbsp. soy sauce
- 1 crushed garlic clove
- 1/8 tsp. ground pepper
- 3/4 c. raw carrot strips (3 x 1/4-inch)
- 1/2 c. celery, sliced diagonally
- 1 c. green onion, sliced diagonally
- 1 c. green pepper, sliced diagonally
- 2 1/2 c. sliced fresh mushrooms
- 1/2 c. sliced water chestnuts
- 1 to 1 1/2 c. boiling water
- 2 Tbsp. cornstarch
- 1/4 c. cold water
- If time allows, partially freeze meat for easier slicing. Remove visible fat around outside of meat.
- Cut meat into thin strips, 3/4-inch long and 1/8-inch thick.
- Heat oil in large frying pan.
- Brown meat strips, stirring with wooden spoon.
- Add 1 1/2 cups hot water, beef bouillon cube, soy sauce, garlic and black pepper.
- Cover and simmer slowly for 40 minutes.
