Asparagus-Stuffed Fish Fillets
- 4 flounder fillets (1 lb.)
- 1/2 tsp. zest and 2 Tbsp. juice from 1 lemon, divided Safeway 4 ct For $5.00 thru 02/09
- 1 tsp. lemon pepper seasoning
- 20 small asparagus spears, trimmed (about 1 lb.)
- 1/4 lb. (4 oz.) 2% Milk VELVEETA, cut into 1/2-inch cubes
- 1/4 cup fat-free milk
- 1/4 tsp. paprika
- Sprinkle fish with lemon juice and seasoning.
- Arrange 5 asparagus spears on narrow end of each fish fillet; roll up.
- Secure with wooden toothpicks.
- Place, seam sides down, in 10x6-inch microwaveable dish; cover with waxed paper.
- Microwave on HIGH 5 to 7 min.
- or until fish flakes easily with fork.
- Microwave 2% Milk VELVEETA, milk and lemon zest in medium microwaveable bowl 2 to 3 min.
- or until VELVEETA is completely melted and sauce is well blended, stirring after each minute.
- Remove and discard toothpicks from fish roll-ups.
- Sprinkle fish with paprika.
- Serve topped with VELVEETA sauce.
