Chicken And Sausage Jambalaya
- 3 Tbsp. butter
- 1/2 lb. hot sausage
- 3/4 lb. boneless, skinless chicken breast, cut into bite size pieces
- 2 Tbsp. blackened Cajun seasoning
- 1 c. yellow onions, chopped
- 1 c. green bell peppers, chopped
- 1 Tbsp. minced garlic
- 1 1/2 c. uncooked rice
- 2 1/2 c. chicken stock
- Melt butter in large saucepan over high heat.
- Add sausage. Brown 4 or 5 minutes, stirring frequently and scraping bottom of pan.
- Add chicken.
- Cook for 4 or 5 minutes or until brown.
- Add blackened seasoning, garlic, plus 1/2 cup each of onion and bell pepper.
- Cook until vegetables start to soften, about 6 to 8 minutes.
- Stir in rice and stock and add remainder of vegetables. Bring all to a boil and turn heat down to a slow simmer.
- Simmer 30 minutes.
- Pour in baking pan and bake at 350u0b0 for 1 hour.
