Chicken And Sausage Jambalaya

  1. Melt butter in large saucepan over high heat.
  2. Add sausage. Brown 4 or 5 minutes, stirring frequently and scraping bottom of pan.
  3. Add chicken.
  4. Cook for 4 or 5 minutes or until brown.
  5. Add blackened seasoning, garlic, plus 1/2 cup each of onion and bell pepper.
  6. Cook until vegetables start to soften, about 6 to 8 minutes.
  7. Stir in rice and stock and add remainder of vegetables. Bring all to a boil and turn heat down to a slow simmer.
  8. Simmer 30 minutes.
  9. Pour in baking pan and bake at 350u0b0 for 1 hour.
