Ham Fried Rice
- 4 Tablespoons Peanut, Canola, Or Vegetable Oil, Divided
- 3 whole Large Eggs, Beaten
- 1 whole Onion, Minced
- 1 clove Garlic, Minced
- 1 pound Ham Steak, Cut Into 1/4-inch Dice
- 2 cups Frozen Mixed Veggies, Thawed (peas, Corn, Carrots)
- 1 Tablespoon Sesame Oil
- 2 Tablespoons Soy Sauce
- 1 teaspoon Fine Salt
- 1/2 teaspoons Sugar
- 4 cups Leftover Cooked White Or Brown Rice
- Sriracha Or Duck Sauce (optional)
- In a large skillet over medium-high heat, heat half of the oil.
- Add the eggs and cook and scramble them to your liking.
- Remove from pan and set aside.
- Add remaining oil to pan and once its hot add the onions.
- Saute the onions until translucent.
- Add garlic and saute for about a minute.
- Add diced ham and veggies and saute for a few more minutes to heat them through, then stir in the sesame oil, soy sauce, salt, sugar, rice and scrambled eggs.
- Mix well and cook until rice is heated through.
- Serve with Sriracha or duck sauce if desired.
- Note: Be sure to store sesame oil in the refrigerator because it can turn rancid rather quickly.
