Spinach Cheese Balls
- 1 cup Hot Water
- 1/4 cups Butter Or Margarine
- 1 box (6 Oz. Size) Stuffing Mix
- 2 boxes (10 Oz. Size) Frozen Spinach, Thawed
- 1 Tablespoon Butter Or Margarine
- 1 Onion, Finely Diced
- 4 cloves Garlic, Minced
- 1/2 teaspoons Pepper
- 1/2 cups Grated Parmesan Cheese
- 2 Eggs
- 1.
- Preheat oven to 400 F. 2.
- In a large bowl, mix the hot water and first amount of butter until butter is melted.
- 3.
- Stir in the stuffing mix.
- 4.
- Squeeze the spinach to drain all the liquid.
- Discard liquid.
- Add spinach to stuffing mixture.
- 5.
- In a frying pan, melt the second amount of butter or margarine over medium heat.
- Saute the onion until soft, translucent and turning golden, about 10 minutes.

- Add the garlic to the onions and cook for 2 more minutes.
- 7.
- Add the onion and garlic mixture to the spinach and stuffing.
- Add the pepper and cheese; mix well.
- 8.
- In a small bowl, beat the eggs.
- Mix the eggs into the stuffing mixture.
- 9.
- Form the mixture into 1-inch balls.
- Place onto a large rimmed baking sheet lined with parchment paper, about 2 inches apart.
- Bake for 25-30 minutes, or until lightly golden brown and cooked through.
- 10.
- Serve warm.
- Note: You can prepare and bake these moreish appetizers ahead of time and store them in the fridge until youre ready to serve them.
- Then pop them in a 400 F oven for 10-15 minutes.
