Fish with Asian Slaw Topping
- 1 carrot, grated Target 2 lb For $3.00 thru 02/06
- 1 zucchini, grated
- 2 spring onions, sliced
- 2 tablespoons KRAFT Crunchy Peanut Butter
- 2 teaspoons soy sauce
- 2 teaspoons sweet chilli sauce
- 4 x 180g white fish cutlets (e.g. blue eye or mahi mahi)
- steamed green beans, to serve
- 2 spring onions, cut on the diagonal, to serve
- Combine carrot, zucchini, spring onions, peanut butter, soy sauce and sweet chilli sauce in a medium bowl.
- Place fish into a shallow microwave proof dish in a single layer.
- Divide vegetable mixture evenly between four fish fillets and press mixture on top of fillets.
- Cook in a microwave oven HIGH (850W) for 5-8 minutes or until fish is cooked through (fish will flake when cooked).
- Serve over steamed beans, and garnish with spring onions.
