Fish with Asian Slaw Topping

  1. Combine carrot, zucchini, spring onions, peanut butter, soy sauce and sweet chilli sauce in a medium bowl.
  2. Place fish into a shallow microwave proof dish in a single layer.
  3. Divide vegetable mixture evenly between four fish fillets and press mixture on top of fillets.
  4. Cook in a microwave oven HIGH (850W) for 5-8 minutes or until fish is cooked through (fish will flake when cooked).
  5. Serve over steamed beans, and garnish with spring onions.
