Angel Hair Pasta With Garlic And Lemon
- 1 tsp. olive oil
- 2 garlic cloves, minced
- 1/2 c. dry white wine
- 1/4 c. fresh lemon juice
- 2 large tomatoes, diced
- 8 oz. angel hair pasta
- 1/4 c. fresh basil or 1/8 c. dry basil
- 2 Tbsp. Parmesan cheese
- freshly ground black pepper to taste
- Have large pot of water boiling for pasta while you prepare sauce.
- Saute garlic in olive oil in saute pan over medium heat just until garlic begins to brown.
- Remove pan from heat.
- Return pan after adding wine.
- Cook (simmer) for 1 to 2 minutes, until wine is reduced to half.
- Stir in the lemon juice and tomato. Remove from heat.
- Cook pasta in boiling water for 30 seconds to 1 minute.
- Drain.
- Toss pasta with basil, Parmesan cheese, pepper and tomato mixture.
- Serve immediately.
