Champagne Artichoke Hearts

  1. In a large pot over medium heat combine butter, garlic and onions and sweat for 5 minutes until onions are soft and translucent.
  2. Stir in artichoke hearts, vegetable broth and Champagne.
  3. Season with salt and pepper.
  4. Bring to simmer over medium heat and let simmer for 6 to 7 minutes.
  5. To serve, laddle the hearts into a bowl.
