Seasonal One Pot Chicken, Chorizo and Pumpkin/Squash Casserole

  1. Preheat oven to 180 C
  2. In a flameproof & oven-safe pot, melt the butter
  3. Chop chorizo into rough slices (thicker than a 1 coin) and cook in the pot with the diced chicken until golden brown
  4. Set aside chicken and chorizo with a slotted spoon, taking care not to remove the juices inside the pot
  5. Chop onions and dice garlic, put this into the pot
  6. Wash the squash/pumpkin and cut into small chunks without removing the skin (about the size of half an egg) and add to pot
  7. Add in sage, parsley or just mixed herbs and cook this mixture for about 20 mins or until the squash is soft, stirring often
  8. Add the chicken and chorizo back into the pot
  9. Add the can of tomatoes and half a cup of red wine to the pot
  10. Season to taste with salt and pepper
  11. Cover with a lid and cook this for 15 minutes on a low-med heat
  12. Put the pot in the preheated oven and cook for 40-60 minutes
  13. Serve with sweet potatoes, or potato salad, and plenty of fresh, seasonal vegetables :)
