Whole Wheat Apple Pancakes Recipe
- 1 c. whole wheat flour
- 1/2 c. all-purpose flour
- 1 tbsp. sugar
- 1 teaspoon baking soda
- 1/2 teaspoon baking pwdr
- 1 c. skim lowfat milk
- 1/2 c. finely minced apple
- 1 egg, beaten
- Vegetable cooking spray
- Combine first 5 ingredients in a large bowl; mix well.
- Combine lowfat milk, apple, and egg; add in to flour mix, stirring till smooth.
- Place a griddle or possibly skillet coated with cooking spray over medium heat till warm.
- Spoon batter, 2 Tbsp.
- at a time, onto griddle.
- Cook till edges are slightly dry.
- Turn; cook other side till golden.
- Repeat procedure with remaining batter.
- Yield: 20 (3 inch) pancakes (about 45 calories per pancake).
