Red Velvet Cakeballs
- 18 12 ounces red velvet cake mix
- 16 ounces container cream cheese frosting
- 16 ounces package white melting chocolate
- Prepare and bake cake mix following package directions for a 13 x 9 cake; let cool.
- Crumble cooled cake in a large bowl.
- Stir in cream cheese frosting.
- Roll mixture into balls the size of quarters.
- Freeze on a baking sheet for several hours or overnight.
- Melt chocolate in a double boiler.
- Dip balls into chocolate and place on waxed paper.
- Let sit until firm.
