Sauteed Shrimp Over Linguini

  1. Cook linguini and drain (keep hot).
  2. Stir-fry shrimp or scallops over medium heat in olive oil with 1/2 of the crushed garlic.
  3. Remove from skillet.
  4. (Only cook shrimp until pink on both sides, or they'll be tough.)
  5. Stir-fry zucchini in the same skillet, adding 3 tablespoons soy sauce and rest of crushed garlic.
  6. Add pea pods and cook until pea pods are shiny, being careful not to overcook.
  7. Add basil.
  8. Add 1/4 cup water, if pan gets dry, then add the shrimp into the zucchini mixture.
  9. Last, before serving, add sliced tomatoes and cook for about 5 minutes more.
  10. Add all of this to drained linguini and sprinkle with Parmesan cheese.
