Sauteed Shrimp Over Linguini
- 1 lb. shrimp or scallops
- 1 lb. linguini
- 2 or 3 Tbsp. olive oil
- 3 Tbsp. crushed garlic
- 1 tsp. basil (fresh or dried)
- 3 Italian tomatoes
- 2 small zucchini, sliced
- 1/4 lb. pea pods (optional), cleaned
- soy sauce
- Parmesan cheese
- Cook linguini and drain (keep hot).
- Stir-fry shrimp or scallops over medium heat in olive oil with 1/2 of the crushed garlic.
- Remove from skillet.
- (Only cook shrimp until pink on both sides, or they'll be tough.)
- Stir-fry zucchini in the same skillet, adding 3 tablespoons soy sauce and rest of crushed garlic.
- Add pea pods and cook until pea pods are shiny, being careful not to overcook.
- Add basil.
- Add 1/4 cup water, if pan gets dry, then add the shrimp into the zucchini mixture.
- Last, before serving, add sliced tomatoes and cook for about 5 minutes more.
- Add all of this to drained linguini and sprinkle with Parmesan cheese.
