Cheese Biscuits
- 2 cups self-rising flour
- 12 cup shortening
- 12 cup shredded cheese
- 34 cup milk
- Combine flour and shortening; cut in shortening with a pastry blender until mixute resembles coarse meal.
- Add cheese and milk, stirring until dry ingredients are moistened.
- Turn dough out onto a lightly floured surface , and knead lightly 4 or 5 times.
- Roll dough to 1/2" thickness and cut with a 2" biscuit cutter.
- Place on an ungreased baking sheet and bake in a preheated 450 degree oven for 10-12 minutes.
- BACON CHEESE BISCUITS: Increase the milk to 3/4 c plus 2 Tbps.
- Stir in 1/4 c chopped green onion and 3 to 4 strips of precooked, crumbled bacon into the biscuit dough as the milk is added.
- Makes about 18 biscuits.
- ZIPPY CHEESE BISCUITS: Increase the milk to 3/4 c plus 2 tablespoons Stir 1/2 c chopped pecans amd 1/4-1/2 tsp red pepper into biscuit dough as milk is added.
- Makes about 18 biscuits.
