Bourbon Street Po' Boy Recipe
- 6 Tbsp. Butter or possibly margarine
- 6 Tbsp. Flour
- 1 x Onion,large -- sliced
- 1 x Green bell pepper,sm -- Sliced
- 2 c. Beef broth
- 1 tsp Worcestershire sauce
- 3/4 tsp Tabasco sauce
- 1/2 tsp Thyme -- crumbled
- 1 lb Beef -- thinly sliced Cooked
- 4 x Hero rolls

- Heat butter in medium saucepan; stir in flour.
- 2.
- Cook over medium heat, stirring constantly, till flour browns, about 4 min.
- 3.
- Add in onion and bell pepper.
- 4.
- Cook over medium heat, stirring constantly, about 5 min; gradually stir in broth.
- 5.
- Add in Worcestershire sauce, Tabasco and thyme; stir constantly till mix boils and thickens.
- 6.
- Cut a thin slice from top of each roll; scoop out soft insides.
- 7.
- Arrange meat on each roll; spoon gravy over meat and replace tops on rolls.
