Green Bean, Bell Pepper and Artichoke Saute

  1. Spray large nonstick skillet with cooking spray, and heat over medium-high heat.
  2. Add green beans and bell pepper strips.
  3. Season to taste with salt and pepper, and cook 5 minutes, stirring often, or until vegetables begin to soften.
  4. Add artichokes and stock, and cook 30 seconds, or until liquid is reduced to 2 Tbs.
  5. Remove from heat, and sprinkle with cheese.
  6. Serve warm.
