Enchilada Casserole
- 1 pkg. enchilada mix
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 1 1/2 lb. ground beef
- 2 cans enchilada sauce
- 1/2 tsp. garlic flakes
- Cheddar cheese, sliced
- mild Longhorn
- 1 pkg. corn tortillas
- Combine in skillet, onion, bell pepper, garlic, ground beef, salt and pepper to taste.
- Cook until ground beef is done and then drain.
- Heat enchilada sauce in pan.
- Dip each tortilla in enchilada sauce.
- Put a layer of dipped tortillas, ground beef mix, cheese and small amount of enchilada sauce, another layer of dipped tortillas, ground beef mix, cheese and small amount of sauce.
- Finally 3rd layer of dipped tortillas and remainder of sauce.
- Bake in oven at 350u0b0 for 20 minutes.
- Top with cheese and bake until cheese melts.
