Better Bran Muffins
- 1 14 cups flour
- 12 cup soy flour
- 1 cup all-bran cereal
- 12 cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 34 teaspoon ground cinnamon
- 18 teaspoon ground cloves
- 2 eggs
- 23 cup soymilk
- 12 cup raisins
- 14 cup soy oil
- Spray muffin pan with vegetable cooking spray or line with paper baking cups.
- Stir together all dry ingredients.
- Combine lightly beaten eggs, soymilk and soyoil.
- Add egg mixture to flour mixture; stir until moistened.
- Fold in raisins.
- Fill muffin pan 2/3 full.
- Bake in a 400F.
- oven for 15-20 minutes.
- Per serving ( 1 muffin): 134 calories, 4.7 grams protein, 26.4 grams carbohydrates, 6.7 grams total fat, 0.8 grams saturated fat, 30 mg cholesterol, 188 mg sodium.
