Red kidney beans and rice
- 3 can Red kidney beans
- 2 onions
- 2 tsp tomato paste
- 1 1/2 cup rice
- 1/4 cup vermicelli
- 1 Sliced Peppers
- 1 Diced Radishes
- 1 lb stewing or roast beef
- Rinse rice 3x and let soak in lukewarm water
- Optional: cut up beef in tiny pieces and place in pressure cooker or regular pot with ~1 cup water.
- Add salt and pepper and cook at medium heat.
- Cut onions in pieces using food processor
- Fry cut onions in a pot with a little added canola oil.
- Cook at mid-high heat
- Place handful of vermicelli in 2nd pot.
- Fry using just enough canola oil to soak them.
- Cook on medium heat
- When vermicelli begin to turn brown, add the rice (after being drained) and 3 cups of water (or enough to cover rice).
- Cook at low heat until soft
- Place beef in pot with fried onions
- Drain 3 cans of red kidney beans from their liquid and add to 1st pot
- Mix tomato paste with 1 cup water (or juice from beef pot) and add into pot.
- Cook at low heat for ~10mins
- Add salt as needed
