Flora's Low Carb/Low Fat Shepherd Pie
- 1 lb ground chicken
- 1/2 onion, diced
- 1 head of cauliflower, chopped
- 2 tbsp butter
- 1/2 cup beef broth
- 1/2 cup milk
- 1 beef bouillion cube
- 2 tbsp tomato paste
- 1 can peas
- 1 can carrots
- In a medium sized skillet, brown the chicken and onions together until fully cooked.
- While that is cooking, boil your cauliflower until fork tender
- Add your broth, bouillion, tomato paste, peas and carrots to the shredded chicken and simmer.
- When the cauliflower is tender, drain then place in a blender or food processor, add the butter, and whip.
- Add milk until you get desired texture.
- Place the meat mixture in a pie plate, then spoon the cauliflower mash on top.
- Bake at 350 until hot and bubbly.
- About 20 minutes.
