Seared Cabbage, Apples, Pears, Baguette & Tangy Vinaigrette

  1. Dressing -- add all the ingredients in a small baggie.
  2. I like to use a baggie because I can just shake and then put in the refrigerator and not worry about clean up.
  3. But use a small bowl or measuring cup if that works better.
  4. Whatever works best for you.
  5. Less dishes for me is always a plus.
  6. Bacon and Fruit toppings -- saute the bacon in a medium size saute pan.
  7. No oil necessary.
  8. Just saute until crispy brown.
  9. About 5-8 minutes until done.
  10. Remove and then remove to a plate, lined with a paper towel to drain.
  11. Reserve 1 teaspoon of the drippings.
  12. Toppings -- Add the onion, pears and apples to that same sauce pan with the reserved drippings.
  13. Cook 5 minutes until the fruit gets slightly soft.
  14. Remove and set to the side as you cook the cabbage.
  15. Salad -- Now same pan, no need to dirty more dishes, cut the cabbage into quarters and then in half again.
  16. Just brush with olive oil and season with salt and pepper and pan saute.
  17. With the cabbage brushed with olive oil you do not need to add any extra to the pan.
  18. Just a non stick pan 3-4 minutes per side.
  19. Now this can be done on a outside grill, inside grill pan or just a saute pan.
  20. This makes it easy for me when I am just having a bowl of soup and this.
  21. Once lightly brown on each side and slightly tender, remove and cover with foil.
  22. Dinner -- Well almost.
  23. Just mix honey and olive oil and brush on baguette slices.
  24. In a 400 degree oven just toast.
  25. Remove, add the cheese and return to the oven and melt.
  26. That is it.
  27. You can do this as you build the salads.
  28. Now it is dinner -- Add a slice of the warm cabbage slice to your plate and top with the warm fruit and onions.
  29. Then top with bacon and the chilled vinaigrette.
  30. Garnish with the cheesy baguette.
  31. A cup of potato soup and it is an amazing easy light dinner.
  32. Sometimes easy comfort food is what I need.
  33. A nice change from heavy casseroles or pastas.
  34. This is still very filling and satisfying, but just that bit lighter.
