Fajitas
- 1 lb. sirloin strips (shrimp or chicken strips)
- 1/2 c. oil
- 5 tsp. lime juice
- 3 Tbsp. fajita seasoning (onion, garlic and red pepper)
- 1 tsp. salt
- 1 medium red pepper, sliced
- 1 medium green pepper, sliced
- 1 small onion, sliced
- 3 green onions, chopped
- 1/2 c. cilantro
- 1/4 c. Feta cheese or Cheddar cheese, grated
- 1 pkg. tortillas
- Blend oil, lime juice, fajita seasoning and meat.
- Marinate 2 hours.
- Drain; reserve marinade.
- In heavy frying pan, on high, heat 4 tablespoons marinade.
- Add peppers and onion; saute. Remove.
- Add 2 tablespoons marinade to frying pan.
- Add meat; stir until cooked (3 to 5 minutes).
- Remove.
- Pour remaining marinade into pan; cook 1 minute.
- Pour over meat and peppers.
- Add cilantro; toss.
- Serve on tortilla covered in cheese.
- Serves 4 to 6.
