Fajitas

  1. Blend oil, lime juice, fajita seasoning and meat.
  2. Marinate 2 hours.
  3. Drain; reserve marinade.
  4. In heavy frying pan, on high, heat 4 tablespoons marinade.
  5. Add peppers and onion; saute. Remove.
  6. Add 2 tablespoons marinade to frying pan.
  7. Add meat; stir until cooked (3 to 5 minutes).
  8. Remove.
  9. Pour remaining marinade into pan; cook 1 minute.
  10. Pour over meat and peppers.
  11. Add cilantro; toss.
  12. Serve on tortilla covered in cheese.
  13. Serves 4 to 6.
