Frosty Lemon Ice

  1. Stir boiling water into gelatin in medium bowl at least 2 minutes until completely dissolved.
  2. Stir in seltzer, lemon zest and juice.
  3. Pour into 9-inch square pan; cover.
  4. Freeze 3 hours or until frozen.
  5. Let stand at room temperature 10 minutes.
  6. Beat with electric mixer or blend in covered blender container on high speed until smooth.
  7. Spoon into dessert dishes.
  8. Store leftover ice in freezer.
