Philly Cheese Wrap

  1. Preheat flat top griddle at 375F.
  2. Saute onions and peppers in oil on griddle until crisp-tender.
  3. Place in full steam table pan to keep warm until ready to use.
  4. (Use half-size steam table pan for trial recipe.)
  5. For each serving: Heat 2 oz.
  6. roast beef on griddle for 1 minute or until heated through.
  7. Top 1 tortilla with 1 oz.
  8. of the pepper mixture, roast beef, about 1 Tbsp.
  9. of the hot sauce and 1/4 cup of the process cheese shred.
  10. Fold sides of tortilla toward center; roll up tightly.
  11. Cut diagonally in half to serve.
  12. Serve immediately.
