Texas Red Chili (Hot) Recipe
- 3 pound beef boneless round steak, cut into 1 inch cubes
- 1 lg. onion, finely minced (about 1 c.)
- 4 cloves garlic, finely minced
- 1/4 c. oil
- 2 c. tomato puree
- 2 to 3 tbsp. grnd red chiles
- 1 teaspoon cumin seed, grnd
- 1 teaspoon grnd coriander
- 2 Anaheim chiles, seeded and minced
- 4 Jalepeno chiles, seeded and minced
- Shredded Cheddar cheese
- Flour tortillas
- Cooked pinto beans
- Cook and stir beef, onion and garlic in oil in 4 qt Dutch oven till beef is brown.
- Stir in remaining ingredients except cheese, tortilla, and beans.
- Heat to boiling.
- Reduce heat, cover and simmer, stirring occasionally, till beef is tender, about 2 hrs.
- Serve with cheese, tortillas, and beans.
- Makes 6 servings.
