Dutch Beef Birds with Onions (Vullen Oni Kapp)

  1. Cut the steak in 6 slices and pound thin.
  2. Season the meat with the salt and pepper; sprinkle the top sides with the marjoram.
  3. Place an onion on each and roll up; tie with thread or fasten with toothpicks.
  4. Roll the birds in the flour.
  5. Heat the oil in a heavy skillet and brown the rolls on all sides.
  6. Pour off the fat.
  7. Add the tomatoes and horseradish; cover and cook over low heat 1 1/2 hours.
  8. Taste for seasoning.
  9. Serves 6.
