Dutch Beef Birds with Onions (Vullen Oni Kapp)
- 1-1/2 lb. round steak, cut in 6 slices and pounded thin
- 2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1/4 tsp. marjoram
- 6 sm. white onions
- 1/4 cup all purpose flour
- 2 tbsp. vegetable oil
- 1 can (1-1/4 lb.) tomatoes
- 2 tbsp. prepared horseradish
- Cut the steak in 6 slices and pound thin.
- Season the meat with the salt and pepper; sprinkle the top sides with the marjoram.
- Place an onion on each and roll up; tie with thread or fasten with toothpicks.
- Roll the birds in the flour.
- Heat the oil in a heavy skillet and brown the rolls on all sides.
- Pour off the fat.
- Add the tomatoes and horseradish; cover and cook over low heat 1 1/2 hours.
- Taste for seasoning.
