Chili Con Carne
- 1/2 lb. lean ground beef
- 1/2 lb. boneless, skinless chicken breasts, chopped fine
- 1 large yellow onion, chopped fine
- 1 medium green pepper, chopped
- 2 cloves minced garlic
- 1 Tbsp. chili powder
- 1 Tbsp. ground cumin
- 1 can low sodium tomato puree
- 1 c. low sodium beef broth
- 1 Tbsp. low sodium tomato paste
- 1 tsp. red pepper flakes
- 1 tsp. ground coriander
- 1 tsp. each oregano and basil
- 1 bay leaf
- 1/4 c. shredded Cheddar cheese
- Spray 10-inch skillet with nonfat cooking spray.
- Set over moderate heat for 30 seconds.
- Add ground beef and chicken.
- Stir often until no longer pink (4 to 5 minutes).
- Push to one side of the skillet.
