Macaroon Cake

  1. Grease a 10-inch tube pan.
  2. Preheat oven to 300F.
  3. In a VERY large bowl, cream the shortening, margarine, and sugar until very fluffy and creamy.
  4. Add egg yolks and beat plenty more.
  5. Add almond extract.
  6. Blend in flour and milk alternately.
  7. Add coconut flakes.
  8. Beat egg whites until stiff and fold in gently but thoroughly.
  9. Bake for 2 hours.
  10. Cool in pan completely.
