Holiday-Spiced Roast Beef

  1. In small bowl, stir together cinnamon, cloves and pepper.
  2. Brush roast with oil; rub with spice mixture.
  3. (Roast can be prepared to this point up to 1 day ahead.
  4. Cover and refrigerate).
  5. Heat oven to 400F Spray shallow roasting pan and rack with nonstick cooking spray.
  6. Sprinkle roast with salt; place on rack.
  7. Bake 30 minutes.
  8. Reduce oven temperature to 325F; bake an additional 45-50 minutes until internal temp reaches 125F for medium-rare.
  9. Place on cutting board; cover loosely with foil.
  10. Let stand 15 minutes.
  11. Meanwhile, place roasting pan with drippings over medium heat; add apple cider.
  12. Bring to a boil, stirring to scrape up any browned bits from bottom of pan.
  13. Boil 2-4 minutes until reduced to 3/4 cup.
  14. Strain; serve sauce with roast.
