Cheesy Chicken and Avocado Fettuccine

  1. Prepare fettuccine according to packet directions.
  2. Drain.
  3. Heat oil in a large frying pan and saute onion and garlic until tender.
  4. Add the chicken and cook until browned and cooked through.
  5. To the same frypan add the cheese spread, evaporated milk, stock powder and pepper then stir over heat until combined.
  6. Add hot fettuccine, avocado and parsley and toss until combined.
  7. Serve garnished with pine nuts and spring onions.
