Baked Eggs With Spinach Recipe

  1. Heat the oil in a saute/fry pan.
  2. Add in the onion, cook till it softens.
  3. Add in the spinach leaves and ham, cook for 1-2 min.
  4. Divide into 4 ovenproof dishes, arrange the minced tomato around the edge, crack an egg into each dish, season with salt, pepper and thyme.
  5. Cover with tin foil and bake at 200c for 5-8 min till the egg has firmed.
  6. Serve immediately with hot toast or possibly croissants.
  7. NOTES : Serves 4
