Baked Eggs With Spinach Recipe
- 2 Tbsp. extra virgin olive oil
- 1 x onion, peeled and sliced finely
- 1 pkt First Choice spinach leaves or possibly 1 bunch spinach
- 100 gm smoked ham, sliced into thin strips
- 4 lrg tomatoes, peeled and diced
- 4 x First Choice Large eggs Salt and grnd black pepper
- 1 pch dry thyme
- Heat the oil in a saute/fry pan.
- Add in the onion, cook till it softens.
- Add in the spinach leaves and ham, cook for 1-2 min.
- Divide into 4 ovenproof dishes, arrange the minced tomato around the edge, crack an egg into each dish, season with salt, pepper and thyme.
- Cover with tin foil and bake at 200c for 5-8 min till the egg has firmed.
- Serve immediately with hot toast or possibly croissants.
