Beef Tacos
- 1 small Spanish onion, chopped
- 1 large tomato, chopped
- 1 clove garlic, minced
- 1 lb. ground beef
- 2 Tbsp. ground mild red chile and 2 Tbsp. ground hot red chile or 2 1/2 Tbsp. chili powder
- 1/2 tsp. oregano
- 1/2 tsp. cumin
- 1 tsp. salt
- 3/4 c. grated Cheddar cheese
- 3/4 c. grated Monterey Jack cheese
- salsa
- 1/2 head lettuce
- 12 taco shells
- Heat the oven to 225u0b0.
- Warm the taco shells in the heated oven.
- Brown the beef in a frying pan.
- Stir in the ground chiles, oregano, cumin, garlic and salt.
- Cook until the flavors blend about 5 minutes.
- Take the taco shells from the oven and raise the heat to 400u0b0.
- Fill the taco shells with the meat mixture.
- Add cheese.
- Heat in the oven until cheese melts, about 5 minutes. Top with lettuce, onion and tomato.
- Serve with salsa.
