Spinach, Cranberry and Goat Cheese Stuffed Pitas
- 1 bunch Fresh Spinach
- 1/2 whole Chopped Gala Apple
- 18 cups Chopped Red Onion
- 1/4 cups Chopped Goat Cheese
- 1/2 whole Chopped Avocado
- 1/2 whole Tomato
- 18 cups Dried Cranberries
- 18 cups Sliced Almonds
- 3 Tablespoons Extra Virgin Olive Oil
- 1 Tablespoon Red Wine Vinegar
- 1 teaspoon Dijon Mustard (optional)
- 1 dash Salt
- 1 dash Pepper
- 2 whole Whole Wheat Pitas, Warmed
- Chop spinach, apple, red onion, goat cheese, avocado and tomato, and place in a large mixing bowl.
- Add dried cranberries and almonds.
- Toss to mix.
- Mix olive oil, red wine vinegar and dijon mustard (mustard is optional) in a small jar.
- Add a dash of salt and pepper, and shake together.
- Adjust olive oil and vinegar to your taste.
- Pour desired amount of dressing over the mixed salad.
- Any leftover dressing can be stored in the refrigerator for a few days.
- Toss to coat.
- Warm pitas.
- Cut in half, and stuff with salad mixture.
