Green Bean, Walnut And Feta Salad
- 1 1/2 lb. fresh green beans, ends trimmed and cut in crosswise pieces
- 3/4 c. olive oil
- 1/2 c. chopped parsley or fresh mint leaves
- 1/4 c. white wine vinegar
- 1/2 tsp. minced garlic
- 3/4 tsp. salt
- 1/4 tsp. freshly ground pepper
- 1 c. chopped toasted walnuts
- 1 c. diced red onion
- 1 c. crumbled Feta cheese
- Drop beans into large pot of boiling water; cook until crisp-tender, about 5 to 6 minutes.
- Drain and rinse with cold water to stop the cooking process.
- Pat dry with paper towels. Combine oil, parsley, vinegar, salt, garlic and pepper; blend well.
- Arrange beans in shallow serving dish.
- Sprinkle with nuts, onion and Feta.
- Just before serving, pour dressing over and toss thoroughly.
- Serves 6.
