Green Bean, Walnut And Feta Salad

  1. Drop beans into large pot of boiling water; cook until crisp-tender, about 5 to 6 minutes.
  2. Drain and rinse with cold water to stop the cooking process.
  3. Pat dry with paper towels. Combine oil, parsley, vinegar, salt, garlic and pepper; blend well.
  4. Arrange beans in shallow serving dish.
  5. Sprinkle with nuts, onion and Feta.
  6. Just before serving, pour dressing over and toss thoroughly.
  7. Serves 6.
