Okra Gumbo

  1. Place chicken in large pot and cover with 4 quarts water.
  2. Bring to a boil, then simmer until chicken is cooked.
  3. Drain water (saving stock), allow to cool and remove meat from bones in large pieces.
  4. In the same pot, melt butter and sautee okra, onion and green pepper until travslucent.
  5. Add garlic and cook for 2 minutes.
  6. Add chicken stock and tomatoes.
  7. Add chicken and cook over medium heat for 30 minutes.
  8. Stir thoroughly.
  9. Serve with rice.
