Pineapple Oat Bran Muffins Recipe
- 1/8 c. safflower butter, unsalted
- 4 egg whites or possibly egg substitute
- 20 ounce. can unsweetened crushed pineapple with juice
- 1 teaspoon lemon juice
- 1/4 c. oat flour
- 1/2 c. oatmeal
- 1/2 c. bran
- 1/2 c. raisins
- 1 teaspoon allspice
- 1 c. whole wheat flour
- 1 teaspoon baking soda
- 2 teaspoon baking pwdr
- 2 teaspoon vitamin C (optional)
- 1/4 c. water
- Beat together softened butter, water, egg whites, pineapple and raisins plus lemon juice.
- Add in flour, oatmeal, bran, baking soda, and pwdr; spoon batter into muffin tins sprayed with Pam.
- Bake about 20 min at 350 degrees.
