Gouda-Filled Potatoes Dijon
- 4 large baking potatoes (2 lb.) Safeway 2 pkg For $5.00 thru 02/09
- 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
- 3/4 cup shredded MAYBUD Smoked Gouda Cheese
- 3 Tbsp. GREY POUPON Dijon Mustard
- 2 Tbsp. chopped fresh chives
- 1/2 tsp. ground red pepper (cayenne)
- Heat oven to 400F.
- Pierce each potato in several places with fork or sharp knife.
- Bake 50 min.
- to 1 hour or until tender.
- Cool slightly.
- Mix all remaining ingredients except pepper until blended.
- Cut each potato crosswise into 3 slices.
- Use melon baller or small spoon to scoop small amount of potato from center of each slice; discard removed centers.
- Place potato slices on baking sheet; sprinkle evenly with pepper.
- Fill centers with cream cheese mixture.
- Bake 15 to 18 min.
