Gouda-Filled Potatoes Dijon

  1. Heat oven to 400F.
  2. Pierce each potato in several places with fork or sharp knife.
  3. Bake 50 min.
  4. to 1 hour or until tender.
  5. Cool slightly.
  6. Mix all remaining ingredients except pepper until blended.
  7. Cut each potato crosswise into 3 slices.
  8. Use melon baller or small spoon to scoop small amount of potato from center of each slice; discard removed centers.
  9. Place potato slices on baking sheet; sprinkle evenly with pepper.
  10. Fill centers with cream cheese mixture.
  11. Bake 15 to 18 min.
  12. or until heated through.
