Stir Fried Bok Choy with Peanut Sauce

  1. Trim ends of bok choy.
  2. Wash, pat dry with paper towels, and then set aside.
  3. Heat a large skillet or wok over medium-high heat.
  4. Add oil, and then stir in shallots and garlic.
  5. Cook for about 1 minute, or until soft.
  6. Stir in peanut butter, water, fish sauce, rice vinegar, and brown sugar.
  7. Stir sauce until well combined and simmer on low heat for about 30 seconds, or until sauce thickens.
  8. Increase heat to medium-high heat, and then stir in bok choy.
  9. Cook for 1-2 minutes, or until bok choy is tender and just wilted.
  10. Garnish with roasted peanuts and serve warm.
