Tomato And Bacon Pasta Salad
- 1/4 lb. slab or thick sliced bacon, diced
- 1 pt. halved cherry tomatoes
- 2 large cloves garlic, crushed
- 1/8 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. olive oil
- 2 Tbsp. red wine vinegar
- 4 c. Borto lettuce, torn (1 head)
- 1/2 c. parsley leaves (whole)
- 2 Tbsp. fresh tarragon leaves (optional)
- 3 oz. goat or Feta cheese
- 8 oz. bow tie pasta, cooked
- Saute bacon 5 minutes until browned; remove bacon with slotted spoon to cup lined with paper towel.
- Discarding all but 1 tablespoon fat, heat skillet on medium-high and saute tomatoes one minute.
- Add garlic; saute 30 seconds.
- Add pepper, oil and vinegar and mix well.
- Place remaining ingredients in serving bowl; top
- with bacon and tomato and mix and toss.
- Makes 4 servings.
