Oatmeal Raisin Flax Cookies

  1. Preheat oven to 350 degrees F.
  2. Combine almond flour, flax seed meal, baking soda, and cinnamon in a small bowl and set aside.
  3. Using a stand or hand mixer, combine butter and sugar until creamy.
  4. Add egg to butter and sugar.
  5. Gradually add flour mixture to butter and mix until just combined.
  6. Stir in raisins.
  7. Roll dough into tablespoon-sized balls and place on Silpat or parchment-lined cookie sheet.
  8. Bake at 350 degrees F for 8-12 minutes until slightly brown at the edges.
  9. Let cool for 3-5 minutes on cookie sheet.
  10. Remove and finish cooling on wire rack.
