Brown Rice Veggie Medley

  1. Steam brown rice, covered in broth and seasonings for 30 minutes.
  2. Add diced carrots.
  3. Continue covered steaming for 10 more minutes.
  4. Add chopped celery, peppers and leeks.
  5. Continue covered steaming for 5 more minutes.
  6. Add sliced zucchini squash last 5 minutes of covered steaming.
  7. Total steaming time: 50 minutes.
  8. Steaming time for veggies may be lengthened or shortened depending on individual tastes.
  9. Salt may be added according to individual tastes.
  10. Use veggie, mushroom broth, or plain water instead of chicken broth, if preferred.
  11. Add more broth during veggie steaming if needed.
  12. Sprinkle on 1 T of shredded parm.
  13. cheese just before serving, if desired.
  14. Garnish with cool, fresh quartered tomatoes just before serving.
