Orzo with Fresh Peas and Mint Pesto

  1. Combine first 6 ingredients in a food processor and pulse until almost smooth.
  2. With the machine running, slowly add the olive oil until emulsified.
  3. Season with salt and pepper to taste.
  4. Place the orzo in a large bowl and combine with the pesto.
  5. Fold in the peas and season with salt and pepper to taste.
  6. Garnish with fresh parsley.
