Asparagus And Pasta
- 1 lb. fresh asparagus, diagonally sliced into 1-inch pieces
- 3/4 c. or 4 oz. cooked ham, cut into small pieces
- 1/2 c. chopped onion
- 1/2 c. chopped celery
- 2 Tbsp. margarine
- 3/4 c. light cream
- 1/8 tsp. nutmeg
- 1/2 c. grated Parmesan cheese
- 1/3 c. shredded Fontina cheese (2 oz.)
- 1/3 c. snipped fresh parsley
- 8 oz. hot cooked pasta (linguine, fettucini or spaghetti)
- Cook asparagus in small amount of water, 8 minutes until tender or in a microwave.
- In saucepan, cook ham, onion and celery in margarine for 5 minutes or until vegetables are tender.
- Add cream, nutmeg, pepper and Fontina cheese.
- Cook over medium heat until slightly thickened, stirring occasionally.
- Stir in cooked asparagus.
- Toss asparagus mixture, Parmesan cheese and drained pasta until coated.
- Serve immediately.
