Three Cheese Manicotti
- 12 manicotti shells
- 1 1/2 tsp. vegetable oil
- 1/2 c. onion, chopped
- 3 cloves garlic
- 1/2 c. green pepper, chopped
- 3 c. tomato sauce
- 1/2 tsp. basil
- 1/2 tsp. oregano
- 1/2 tsp. thyme
- 1/2 tsp. pepper
- 2 1/4 c. mozzarella cheese, shredded
- 1 1/2 c. cottage cheese
- 2/3 c. parmesan cheese, grated
- 3 eggs, beaten
- Preheat oven to 350u0b0.
- Cook manicotti shells according to package directions.
- Drain and set aside.
- Heat oil in large saucepan and saute the onion, garlic and pepper.
- Stir in the tomato sauce and seasonings.
- Cover and let simmer, stirring occasionally. Combine 1 3/4
- c. of the mozzarella with the cottage cheese, parmesan and beaten eggs.
- Stir gently. Stuff the cheese mixture into the cooked drained shells, using about 1/4 cup per shell. Pour 1/2 c. sauce into a shallow 2 quart casserole dish.
