Cheesy Spam Bake

• 6 to 8 potatoes, sliced
• 3 Tbsp. butter
• 1 small chopped onion
• 1/2 tsp. paprika
• 1/8 tsp. dried thyme
• 2 Tbsp. flour
• 1 tsp. dried mustard
• 1 tsp. salt
• 1/2 tsp. pepper
• 1 c. light cream
• 2 c. Spam, cubed
• 1 c. sharp Cheddar cheese, shredded

1. Preheat oven to 350u0b0.
2. Cook sliced potatoes in boiling water (salted) 15 minutes.
3. Drain, saving 1 cup of cooking liquid. Place potatoes in casserole dish.
4. Melt butter in large skillet. Add chopped onion and brown slightly; add paprika, thyme, flour, dried mustard, salt and pepper.
5. Stir in reserved liquid; add light cream and cook until thick, stirring constantly.
6. Add cubed Spam and 1/2 cup shredded sharp cheese.
7. Pour sauce over potatoes; toss lightly.
8. Top with 1/2 cup shredded sharp cheese; bake at 350u0b0 for 45 minutes.
9. Serve with green salad.
