Dijon Crusted Fish
- 1/4 cup reduced fat mayonnaise
- 2 Tbsp. grated Parmesan cheese, divided
- 1 Tbsp. GREY POUPON Dijon Mustard
- 1 Tbsp. prepared horseradish
- 1 Tbsp. lemon juice
- 1/2 cup plain dry bread crumbs, divided
- 4 (4 oz.) flounder or other white fish fillets King Sooper's 1 lb For $7.99 thru 02/09
- 1 Tbsp. margarine or butter, melted
- Blend mayonnaise, 1 tablespoon cheese, mustard, horseradish and lemon juice in small bowl; stir in 1/4 cup bread crumbs.
- Arrange fish fillets on greased baking sheet; spread crumb mixture evenly over fillets.
- Combine remaining cheese, bread crumbs and melted margarine or butter; sprinkle over fillets.
- Bake at 350F for 15 to 18 minutes or until fish flakes easily with fork.
- Serve immediately.
