Italian style Mussels and Pasta
- 1/2 cup water
- 1 lb live mussels
- 1/2 lb red pepper spaghetti
- 1 oz parmesan cheese
- 1/2 cup dry, spanish, red wine
- 1 tsp salt
- 1 tsp pepper
- 1 tsp red pepper flake
- 2 tbsp evoo
- 1 tbsp finely chopped garlic
- 1 tbsp lemon juice
- 2 cup of homemade marinara sauce
- 10 castelvetrano olives, chopped
- Cook pasta, Al Dente.
- add wine, evoo and brown sugar to marinara sauce and reduce for 30 minutes on low heat.
- heat skillet to medium/high add water, mussels, red pepper, salt, pepper, basil and garlic to skillet.
- put pasta on a plate, top with marinara sauce and chopped olives.
- place mussels on top of pasta and drizzle the fresh lemon juice and parmesan cheese for the final touch.
- EAT.
