Cheddar, Spinach and Mushroom Frittata
- 34 cup egg substitute
- 1 dash herb seasoning mix (Such as Pensey's Bavarian Herb Blend)
- 1 cup Baby Spinach, washed and drained
- 1 large mushroom, cut into chunks
- 12 ounce extra-sharp cheddar cheese
- 1 pinch fleur de sel
- Preheat oven to 350.
- Whisk together the egg substitute and herb blend.
- Fold in the spinach, mushrooms and cheese.
- Spray individual small casserole dish with cooking spray.
- Pour egg mixture into dish and bake for 15 minutes or until set.
- (If you have a convection oven, you can cut down on the cooking time.

- Remove from oven and lightly sprinkle the salt over the top.
