Mixed Greens With Brie Cheese and Blueberry Vinaigrette

  1. Vinaigrette: Combine vinegar, honey, mustard, salt and pepper in a small bowl.
  2. Gradually add oil, stirring with a whisk.
  3. Check for seasoning.
  4. Set aside.
  5. To Assemble: Toss greens with enough salad dressing to coat.
  6. Divide among 4 plates.
  7. Sprinkle with blueberries, onion and cheese.
  8. Blueberry Vinegar:.
  9. Place blueberries in a small saucepan, and mash with a potato masher.
  10. Add white wine vinegar, 2 T sugar and bay leaf to pan and bring to a boil.
  11. Cover, reduce heat and simmer for 10 minutes.
  12. Remove from heat; cover and let stand for 4 hours.
  13. Strain mixture through a fine sive and discard solids.
  14. Cover and chill.
  15. Store in the fridge for 2 weeks.
  16. This can be used as part of a marinade for pork, chicken thighs or duck or in other vinaigrettes.
