Light Feta and Mint Dip
- 220g tub PHILADELPHIA Extra Light Spreadable Cream Cheese
- 200g soft reduced-fat feta, crumbled
- 2 tablespoons lemon juice Safeway 4 ct For $5.00 thru 02/09
- 1/2 red onion, finely chopped
- 1/2 cup finely chopped mint
- cracked pepper, to taste
- 1 tablespoon mint leaves, extra, to garnish
- 1 Turkish bread, toasted and sliced
- cucumber sticks, to serve
- barbequed chipolatas, to serve
- Place Philly*, feta and lemon juice in a food processor and process until smooth.
- Spoon into a bowl along with the onion, mint and pepper and mix well to combine.
- Chill for at least 1/2 hour before serving to develop the flavours.
- Spoon mixture into serving bowl and garnish with extra mint.
- Serve with Turkish bread, cucumber sticks and chipolatas.
