Spicy Pumpkin Cookies
- 1 c. shortening
- 1 c. sugar
- 1 c. canned pumpkin
- 1 egg
- 2 c. all-purpose flour
- 1 Tbsp. pumpkin pie spice
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- Cookie Glaze (recipe follows)
- chopped nuts (optional)
- In an extra large mixing bowl, beat together the shortening and sugar with an electric mixer until fluffy.
- Add pumpkin and egg; beat until combined.
- In another bowl, combine flour, pumpkin pie spice, baking powder and baking soda; beat into the pumpkin mixture until combined.
- Spoon by rounded teaspoonfuls onto ungreased baking sheets.
- Bake in a 375u0b0 oven for 8 to 10 minutes, or until the tops seem firm.
- Remove; cool on wire racks.
- Prepare Cookie Glaze; spread over the cookies.
- Sprinkle with the chopped nuts, if you like.
- Makes 42 to 48 cookies.
